3 weight watchers points for one turnover/serving and very easy!

Ingredients

  • White self-rising flour
  • ¼ cup s
  • Plain fat free Greek yogurt
  • ¼ cup s
  • Fresh apple s
  • 1 medium peeled, thinly sliced
  • Monk fruit sweetener with erythritol
  • 1 Tbsp
  • Ground cinnamon
  • 1 tsp
  • Table salt
  • 1 pinch es
  • Egg s
  • 1 medium egg s, whisked

Instructions

  1. Make two-ingredient dough by combining flour with yogurt. Knead, roll out and shape dough into a rectangle on a floured cutting board.
  2. To make the filling, sprinkle apple with sweetener, cinnamon and salt; toss to coat.
  3. Top the dough with the filling and mold into turnover shape; press down to seal edges. Cut a few slits on top and brush with egg wash before baking.
  4. Air fry for 8 minutes at 390°F or until golden brown.

We like to use Weight Watchers wraps as the “pastry” (you’ll be amazed at how “pastry-like” they are!) as they’re low in calories, but you can use whichever wraps you like.  Just check the nutritional values of whatever you do choose to use.

It’s important that you use cooking apples for this recipe. They cook very differently to eating apples which will often just break down when cooked. Keeping a bit of texture is important to the overall flavour of the recipe.

We tend to use a natural, granulated sweetener which weighs the same as sugar, and tastes really good! They do tend to cost a little more than the powdered type, lightweight sweetener, but because it’s a like-for-like weight with sugar you don’t need as much! There are several brands available in the supermarkets or online, such as Sukrin, Natvia or Canderel Sugarly.

Place the two parcels on a baking tray sprayed with low calorie cooking spray, then brush the outside with the beaten egg.

Sprinkle with a little sweetener, and bake for 10 minutes at 200°C or until they are golden brown.

Can you cook these Apple Turnovers any other way?

You need to bake these tasty pastries in the oven. We use a microwave to cook the apples, but you could also cook them on the hob by placing them in a saucepan with the water, cinnamon and sweetener and cooking on a low heat until the apples have softened. This should take around 5-6 minutes.

How long can you keep these Apple Turnovers in the fridge?

Once you’ve put them out, ideally you should eat them within 4 hours.

If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Apple Turnovers in the fridge for approximately 3 days or so. You may need to “freshen” these up in the oven to get the crispness back. See more details below.
