Cinnamon Roll Skillet Cake

INGREDIENTS

  • Cake Ingredients:
  • 1 ½ c gluten-free all-purpose flour
  • 1/2 c sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¾ c milk of choice
  • 1 Egg
  • ¼ c unsalted butter, melted
  • 1 tsp vanilla extract
  • Cinnamon Sugar Topping:
  • 1/2 c unsalted butter, melted
  • 1/2 c light brown sugar, packed
  • 1 tsp ground cinnamon
  • Vanilla Icing Drizzle:
  • 1 1/2 c powdered sugar
  • 3 tbsp milk
  • 1 tsp vanilla extract

INSTRUCTIONS

Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: Apply cooking spray on 9-inch cast iron.

Step 3: Add the flour, baking powder, salt, and sugar into a large bowl. Whisk until well mixed.

Step 4: Add egg, milk, vanilla extract, and melted butter. Stir until well combined with the flour mixture.

Step 5: Transfer the batter into the prepared cast iron and spread it evenly.

Step 6: Poke small holes all over the batter.

Step 7: Add all the ingredients for the cinnamon-sugar topping in a small mixing bowl. Whisk until well mixed.

Step 8: Spread the mixture over the cake. Make sure to fill each hole.

Step 9: Swirl with a butter knife the topping.

Step 10: Place it inside the preheated oven and bake for about 30 minutes.

Step 11: Remove the cake from the oven and let it sit at room temperature to cool for at least 10 minutes.

Step 12: Meanwhile, in a small mixing bowl, add all the ingredients for the vanilla icing drizzle. Stir until well blended.

Step 13: Drizzle the mixture over the cooled cake.

Step 14: Slice the cake. Serve and enjoy!
