These One Point Blueberry Muffins are packed with protein, moist, loaded with blueberries, and a fan favorite! I use Devotion Nutrition Angel Food Cake Protein Powder as the base this recipe. It’s 1 Freestyle smartpoint per scoop.
INGREDIENTS:
- 1 cup
- 1/4 cup any flavor 100-110 calorie protein powder 1/2 cup unsweetened applesauce.
- 1/2 cup water (give or take depending on the batter consistency).
- 1/4 cup granulated Stevia or any other sugar substitute ( I use
- 1 egg
- 1/2 cup fresh or frozen blueberries
DIRECTIONS:
- Preheat oven to 350 degrees.
- In a large mixing bowl, combine egg, water, applesauce & sugar substitute. Blend together. Add Kodiak mix & protein powder. Fold in 1/2 cup fresh or frozen blueberries.
- Spray the muffin tin with cooking spray or use muffin foil- liners.
- Bake for 15-18 minutes.
Notes:
- You can omit the protein powder and add 1/3 cup more of the kodiak mix and they would still be the same amount of points.
- Paper muffin liners tend to stick to the batter so coating therefore I recommend using either foil muffin liners or spraying the with non stick cooking spray.
