Skinny Pizza Bites

Skinny Pizza Bites

Ingredients

1 can (12 oz) Pillsbury Jr. Grand Golden Layers Flaky biscuits.

10 tablespoons pizza sauce or marinara sauce, I used Ragu’s pizza sauce

1¼ cup reduced-fat shredded mozzarella cheese

½ cup ham (2 ounces), chopped into pieces. or, use your favorite pizza toppings such as extra lean turkey pepperoni, peppers, onions, mushrooms, etc.

Instructions

1. Preheat oven to 375 degrees. Coat well a (12-cup) regular muffin cups with cooking spray.

2. Open the package of biscuits. Cut each biscuit in half to create 2 thin biscuits. Roll each piece out a bit or flatten in the palm of your hand to form a larger, thin circle (to create a small pizza dough). You should have 20 flatten pieces of pizza dough. Line each muffin cup with pizza dough. The dough will only go up the sides to a little higher than 1/2 the muffin cup. Add ½ tablespoon of pizza sauce to each. Add a little chopped ham to each, about 4-6 little pieces. Sprinkle 1 Tbsp of cheese over the ham pieces.

3. Put muffin tin in oven and bake about 14 minutes, until golden brown. Using a spoon, remove them from the pan and serve immediately.

4. Repeat steps with remaining dough. There should be 8 pizza bites in this muffin tin..

Makes 20 pizza bites

Shopping Tips

You can find Pillsbury Biscuits in most large supermarkets in the refrigerated section where they display all the “ready to bake” items. Look for ones that have 100-110 calories a biscuit.

I used delicious, lean ham that I bought at Trader Joe’s.  It’s uncured and contains ‘no nitrates!”
