Description: 2 SP Strawberry Scones on the Weight Watchers Blue Plan. You can use this recipe for Weight Watchers Green Plan & Weight Watchers Purple plan but please be sure to calculate points using the WW app.
2 Cups of gold medal all purpose flour
1/3 Cup of Monk Fruit Sweetener (granulated sugar substitute)
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 Cup 1% buttermilk
1/2 Cup total 0 greek yogurt. (fat free)
1/2 tbsp Parkay butter spray
1 C chopped strawberries or blueberries or chips (adds points for chocolate) etc.
1 Egg for egg wash
1 tbsp of brown sugar replacement; i used swerve
Preheat your oven to 375 degrees
mix all of your dry ingredients in a large mixing bowl
add the buttermilk, butter spray and greek yogurt
mix very well, use hands if necessary to form dough ball
all your fruit by folding it into the dough a little at a time
place your dough ball on a silicone baking mat, parchment paper or floured (adds points) surface
kneed together and separate into two even pieces of dough
roll into 8″ pizza shape ad cut each piece of dough into 8 pieces to make 16 scones
using a brush, egg wash each scone and sprinkle with brown sugar
Bake for 25 minutes or until golden brown
serving size is 1 scone at 2 SP on the blue plan!
