general tso’s chicken

Recipe of the day: my famous general tso’s chicken!! Who needs takeout when you can make your own at home for WAY WAY less points. And it honestly tastes better.

-SAUCE INGREDIENTS

1/4 cup fat free, low sodium chicken broth

3 tablespoons sugar free bbq sauce

1 tablespoon rice vinegar

1/8 cup reduced sodium soy sauce

2 tablespoons brown sugar replacement, packed

1/2 teaspoon cornstarch

-CHICKEN INGREDIENTS

6 chicken tenderloins (6-8 ounces total)

2 egg whites

1/4 cup flour (half will be discarded)

Seasonings: salt and garlic powder – 1/2 teaspoon

Onion powder, pepper, ginger – 1/4 teaspoon

-DIRECTIONS

1. Cut chicken tenderloins into bite sized pieces.

2. In a small bowl, combine the flour and seasonings, mixing well. In another small bowl, pour your egg whites.

3. Dip chicken into egg whites, then into the flour mixture. Fry in the air fryer at 400 degrees, for 8-10 minutes, flipping and spraying halfway. OR bake in the oven at 450 degrees for 10-15 minutes, flipping halfway. Until thoroughly cooked.

4. Meanwhile, combine the first 5 ingredients for the sauce in a small pan over low/medium heat. Allow sauce to come to a boil and simmer for 5-10 minutes, until thickened. If sauce is too thin, combine cornstarch with 1 teaspoon of water. Slowly add mixture to sauce until desired thickness is reached.
