Black Forest Baked Oatmeal

Serves 8 – as breakfast or dessert

ingredients

4 cups (320g) old-fashioned oats
1/3 cup unsweetened cocoa powder
1/3 cup Stevia
1 ½ cups (360mL) unsweetened vanilla almond milk
2 cups (492g) unsweetened applesauce
½ cup (124g) sugar free chocolate syrup
4 large eggs
1 tablespoon pure vanilla extract
1 teaspoon baking powder
½ teaspoon salt
2 cups frozen dark sweet cherries

Glaze:
9 ounces nonfat Greek yogurt
2 tablespoons unsweetened cocoa powder
3 tablespoons Stevia
1 tablespoon (15g) sugar free chocolate syrup
1 teaspoon pure vanilla extract
¼ teaspoon cherry extract

Preheat oven to 350 degrees. Spray a 9” x 13” glass baking dish with cooking spray.

In a mixing bowl, combine oats, cocoa powder, Stevia, almond milk, applesauce, chocolate syrup, eggs, vanilla, baking powder, salt, and cherries. Pour into prepared baking dish.

Bake for 40 minutes or until set and a toothpick comes out dry.

Glaze: Combine all ingredients; refrigerate.

Store in refrigerator for up to one week. Serve warm or cold with a dollop of glaze.

I microwave one piece on HIGH for 30 seconds.

Garnish with sugar free chocolate syrup, 5g fat free Reddi Wip, and a maraschino cherry, if desired.
