Weight Watchers-Friendly Bacon Cheeseburger Chili Linguine

Ingredients

  • 4 slices center-cut bacon, chopped
  • 1 ½ lbs extra-lean ground sirloin (95% lean or higher)
  • 1 medium sweet onion, diced
  • 3 tbsp Worcestershire sauce
  • 1 (15 oz) can light black beans, drained and rinsed
  • 1 (14 oz) can tomato sauce, no added sugar
  • 1 (10 oz) can Rotel Chili Fixins tomatoes
  • 2 tbsp dark chili powder
  • 1 tbsp ground cumin
  • 1 tsp garlic salt
  • 1 tsp lemon pepper
  • 1 tsp Mexican oregano
  • 1 ½ cups reduced-fat Pepper Jack cheese, shredded
  • 12 oz thin whole-wheat linguine
  • Pickled jalapeño slices, to taste
  • Sliced green onions, for garnish

Instructions

  1. Cook the chopped bacon in a large skillet over medium heat until crispy. Remove and drain on a paper towel.
  2. In the same skillet, add the ground sirloin and diced onion. Cook until the beef is browned and the onion is tender. Drain any excess fat.
  3. Add Worcestershire sauce, black beans, tomato sauce, Rotel tomatoes, chili powder, cumin, garlic salt, lemon pepper, and Mexican oregano. Stir well.
  4. Simmer the chili mixture over medium-low heat for about 10–15 minutes.
  5. Meanwhile, cook the linguine according to the package directions. Drain.
  6. Add the cooked linguine to the chili mixture and stir until well combined.
  7. Stir in about 1 cup of the reduced-fat Pepper Jack cheese until melted.
  8. Divide into servings and top with the remaining cheese, crispy bacon, pickled jalapeños, and green onions.
  9. Serve immediately.
