Ingredients

  • 2 cups chopped romaine lettuce
  • 1 cup cooked chickpea pasta
  • 8 oz skinless chicken breast, cut into small pieces
  • 2 tbsp plain nonfat Greek yogurt
  • 1 tbsp light Caesar dressing
  • 1 tsp Dijon mustard
  • 1 tbsp grated Parmesan
  • 1 tsp lemon juice
  • ¼ tsp garlic powder
  • Black pepper
  • 2 tbsp crushed light croutons
  • Cooking spray

Directions

  1. Cook the pasta according to the package directions and let it cool.
  2. Season the chicken with garlic powder and black pepper. Spray a pan lightly with cooking spray and cook until golden and crispy.
  3. Mix Greek yogurt, light Caesar dressing, Dijon mustard and lemon juice.
  4. Combine lettuce, pasta and chicken.
  5. Add the dressing and toss well.
  6. Sprinkle Parmesan and crushed croutons on top.
