Ingredients
- 2 cups chopped romaine lettuce
- 1 cup cooked chickpea pasta
- 8 oz skinless chicken breast, cut into small pieces
- 2 tbsp plain nonfat Greek yogurt
- 1 tbsp light Caesar dressing
- 1 tsp Dijon mustard
- 1 tbsp grated Parmesan
- 1 tsp lemon juice
- ¼ tsp garlic powder
- Black pepper
- 2 tbsp crushed light croutons
- Cooking spray
Directions
- Cook the pasta according to the package directions and let it cool.
- Season the chicken with garlic powder and black pepper. Spray a pan lightly with cooking spray and cook until golden and crispy.
- Mix Greek yogurt, light Caesar dressing, Dijon mustard and lemon juice.
- Combine lettuce, pasta and chicken.
- Add the dressing and toss well.
- Sprinkle Parmesan and crushed croutons on top.
