- The first shortcut is that the “broth” is actually a combination of cream of chicken soup and cream of celery soup. This allows for a creamier broth than some traditional chicken and dumpling recipes, and the combination of chicken soup and celery soup had an extra flavor to the meal.
- Then, instead of chopping up a variety of different vegetables, I decided just to use a bag of frozen mixed vegetables. I defrosted them first so they’d cook properly, but the taste is exactly the same as if I had spent half an hour chopping and dicing when really all I did was pour a bag into the crockpot. Score.

How Do I Know When Dumplings Are Done?
The easiest way to know if dumplings are done is by piercing them with a toothpick. When they are ready, the toothpick should come out clean when inserted into the dumpling. If anything is sticking to the toothpick, then they need to cook a little longer.
Can You Overcook Dumplings?
When making this easy chicken and dumplings recipe, it’s hard to overcook the dumplings. As long as you follow the directions, you shouldn’t have an issue. However, I know that sometimes life gets in the way and you get busy and 1 hour turns into 2 hours pretty quickly. If you do happen to overcook the dumplings, they will become pretty frail and will be mushy. Don’t worry; you can still eat it, they just may not have the same texture as you had hoped for.

WW-Friendly Chicken & Dumplings
Ingredients:
- 1 medium onion, diced
- 6 boneless, skinless chicken thighs — preferably trimmed of visible fat
- 1 can (10.5 oz) 98% fat-free cream of chicken soup
- 1 can (10.5 oz) 98% fat-free cream of celery soup
- 2 tbsp fresh parsley, chopped
- 1 tsp poultry seasoning
- 2 cups low-sodium chicken broth
- 1 can reduced-fat refrigerated biscuits — use a smaller portion to keep points lower
- 2 cups frozen mixed vegetables, thawed
- Black pepper, to taste
- Optional: garlic powder, onion powder, paprika
Lower-point tip: Use skinless chicken breast instead of thighs and reduced-fat/light biscuits. This can significantly lower the WW Points per serving.
Preparation:
- Add the chicken, onion and chicken broth to a large pot and cook until the chicken is fully cooked.
- Remove the chicken, shred it, and return it to the pot.
- Stir in both light/fat-free soups, parsley, poultry seasoning and black pepper.
- Add the mixed vegetables and simmer for about 10 minutes.
- Cut the refrigerated biscuits into small pieces and place them on top.
- Cover and cook for about 10–15 minutes, until the biscuits are cooked through.
- Serve warm.
