EGG & SPINACH WONTON “CUPCAKES”

INGREDIENTS

  • 24 wonton wrappers
  • Onion
  • Yellow pepper
  • Spinach
  • 7 eggs
  • took 2 sticks of light string cheese

INSTRUCTION

I sautéed onion, yellow pepper, and spinach and put this mixture into the wonton “cups”. I scrambled 7 eggs (add whatever seasoning you like) and fill each cup. I took 2 sticks of light string cheese and cut into 24 pieces, each cup getting one piece on top. I baked at 350 for 10-15 minutes, till eggs are set. I put salsa on top
