Homemade Stuffing, Apple & Onion Sausage Rolls

Ingredients

  • 1 lb (450 g) pork sausage meat
  • 1 cup prepared stuffing mix
  • 1 small apple, peeled and finely diced
  • 1 small onion, finely diced
  • 1 tablespoon butter
  • 1 teaspoon dried sage
  • ½ teaspoon dried thyme
  • ¼ teaspoon black pepper
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten, for brushing

Instructions

  1. Prepare the filling:
    Melt the butter in a skillet over medium heat. Add the diced onion and apple and cook for 4–5 minutes, until softened. Let cool slightly.
  2. Make the sausage mixture:
    In a large bowl, combine the sausage meat, stuffing mix, cooked apple and onion, sage, thyme and black pepper. Mix until everything is evenly combined.
  3. Prepare the pastry:
    Roll out the puff pastry into a rectangle and cut it into 2 long strips.
  4. Add the filling:
    Divide the sausage mixture evenly between the pastry strips, forming a long log down the center of each strip.
  5. Roll:
    Brush one edge of the pastry with beaten egg, then fold the pastry over the filling and press the seam to seal.
  6. Cut into rolls:
    Cut each long roll into approximately 9–10 pieces. Place them seam-side down on a parchment-lined baking sheet.
  7. Brush and bake:
    Brush the tops with beaten egg. Bake at 400°F (200°C) for 25–30 minutes, or until the pastry is deeply golden and the sausage filling is fully cooked.
  8. Cool slightly and serve. 😋

💡 For the same look as the photo

Don’t make the pastry rolls too thin—the filling should be thick and generous, and cut them into roughly 3–4 inch pieces. The egg wash is what gives them that beautiful shiny, golden top.
