Lemon Drizzle Cakeš

This has to be a slimming world staple cake. Itās light fluffy and low Syn. Itās been around for as long as Iāve been doing slimming world but sadly I have no idea who very first created this recipe. Either way itās a winner! š .

Lemon Drizzle Cake š
9 syns the whole cake, cut into 9 just 1 syn a sliceš
50g of self raising flour. (8syns)
2 lemons
2tbs of sweetener. (1syn)
1/2tsp of baking powder
5 eggs separated.
1tsp of lemon essence.
Mix together your flour, sweetener, the zest of 2 of your lemons and the juice of 1. Add in your 5 egg yolks and essence and mix well.
Whisk your egg whites until very stiff. Gently fold into your lemon mixture.
Pour into your silicon or lined loaf tin.
Bake in a preheated oven @180 for 35mins.
For your drizzle squeeze the juice of half a lemon with 2tsp of sweetener and drizzle over the top at the end of cooking. Turn the oven off but leave your cake in a few more minutes to soak in the syrup.
It will shrink/sink a little. That is normal! I made the topping with 0%greek yogurt and a couple teaspoons of icing sugar for a extra couple of Syns but you donāt have to do this, just dust over a pinch of icing sugar or sweetener and add a few berriesš°
