- 1/2 C rolled oats
- 1 tsp baking powder
- 1 5-6 oz container of Blueberry Greek Nonfat Yogurt
- 1/2 ripe banana
- 1 large egg
- 1/2 tsp vanilla extract
- 1/3 C fresh blueberries
- In a blender, combine oats, baking powder, yogurt, banana, egg, and vanilla extract and pulse until smooth.
- Let sit 5-10 minutes to thicken.
- Heat a lightly greased skillet over medium heat and scoop batter onto pan, topping with blueberries and cooking for 1-2 minutes on each side.
