Parisian Apple Cake

Ingredients

  • 3 large apples, peeled and thinly sliced
  • 1 cup all-purpose flour
  • 1½ tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp cardamom
  • 2 large eggs
  • ½ cup nonfat Greek yogurt
  • ¼ cup granulated sugar
  • 2 tbsp light brown sugar
  • 1 tbsp unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 tbsp dark rum (optional)
  • 1 tsp apple cider vinegar
  • Pinch of salt
  • 1 tbsp granulated sugar, for topping

Instructions

  1. Preheat oven to 350°F (175°C). Spray an 8-inch round cake pan with nonstick cooking spray.
  2. In a bowl, whisk together eggs, Greek yogurt, sugar, brown sugar, applesauce, vanilla, rum and apple cider vinegar.
  3. In another bowl, combine flour, baking powder, cinnamon, cardamom and salt.
  4. Gently mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in the sliced apples.
  6. Pour into the prepared pan and sprinkle the remaining 1 tbsp sugar over the top.
  7. Bake for 40–45 minutes, until golden and a toothpick comes out clean.
  8. Cool for at least 15 minutes before slicing.
