What Ingredients Do You Need For The Grilled George?

  • Shredded Rotisserie Chicken
  • Dukes Mayonnaise
  • Celery
  • Sliced Bread (brioche is best!)
  • Crispy Bacon

How Do You Make The Grilled George?

Start by laying out your bacon on a sheet tray lined with parchment or a resting rack and bake at 350 degrees for 25-30 minutes, or until good and crispy. Next up, prepare your chicken salad: in a bowl, mix together shredded store-bough rotisserie chicken, Dukes mayo, small diced celery, and season to taste with salt and pepper.

Spread the chicken salad generously on a slice of bread, top with a layer of crispy bacon, top with another slice of bread, and toast like a grilled cheese using either butter or mayo (preferred) to coat the bread before toasting. Slice of the crust, cut into four pieces, and try not to eat them all before the party!

Ingredients

  • 1 lb store-bought rotisserie chicken, skin removed and shredded
  • 3 tablespoons light mayonnaise
  • 3 tablespoons nonfat Greek yogurt
  • ½ cup celery, finely diced
  • 1 teaspoon Dijon mustard
  • Salt and black pepper, to taste
  • 12 slices light brioche or low-point sandwich bread
  • 6 slices center-cut bacon, cooked and halved
  • Cooking spray

Instructions

  1. In a bowl, combine the shredded chicken, light mayonnaise, Greek yogurt, celery, and Dijon mustard.
  2. Season with salt and black pepper and mix well.
  3. Spread the chicken salad evenly over 6 slices of bread.
  4. Add 1 slice of bacon, cut in half, to each sandwich.
  5. Top with the remaining bread slices.
  6. Lightly spray a skillet with cooking spray and grill the sandwiches over medium heat for 2–3 minutes per side, until golden and crisp.
  7. Slice in half and serve warm.

About 4–5 points per sandwich, depending on the bread and rotisserie chicken used.
