With eggs and Greek yogurt, the blueberry oatmeal bake mixture becomes wonderfully creamy.

Ingredients

  • – 1.5 cups oatmeal
  • – 1 cup Greek yogurt
  • – 4 eggs
  • – 1 cup blueberries
  • – 1 cup muscle milk
  • – Monk fruit sweetener to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the oatmeal, Greek yogurt, eggs, almond milk, and monk fruit sweetener. Mix well until fully combined.
  3. Gently fold in the blueberries into the oatmeal mixture.
  4. Grease a 9×13 inch baking dish with cooking spray or butter.
  5. Pour the oatmeal mixture into the baking dish, spreading it out evenly.
  6. Bake in the preheated oven for 25-30 minutes, or until the casserole is set and lightly golden on top.
  7. Once baked, remove from the oven and let it cool slightly before slicing into 6 portions.
  8. Serve warm and enjoy your delicious and nutritious breakfast casserole!
