Ingredients
- cooking spray
- 1 small onion chopped
- 5 large eggs
- 1 cup fat free cottage cheese
- 2 oz fat free shredded cheese
- ¼ teaspoon salt
- 1/8 teaspoon black pepper
- 1/8 teaspoon crushed red pepper flakes
- 10 oz frozen chopped broccoli thawed and squeezed to remove any liquid
Instructions
- Pre-heat the oven to 350 degrees. Lightly mist a 9-inch pie plate with cooking spray and set aside. Add the chopped onion and cook, stirring occasionally, until the onions are softened and golden.
- Break the eggs into a mixing bowl and beat them with a whisk. Add the cooked onions, cottage cheese, shredded cheese , salt, pepper, red pepper and broccoli and stir to combine. Transfer the entire mixture to the prepared pie plate and make sure the ingredients are evenly distributed. Bake for 35-45 minutes until the middle is set (not jiggly) and the edges are golden. Cut into slices and serve!
