The whole thing is only 1 weight watchers point for the cheese!

Ingredients

  • cooking spray
  • 1 small onion chopped
  • 5 large eggs
  • 1 cup fat free cottage cheese
  • 2 oz fat free shredded cheese
  • ¼ teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon crushed red pepper flakes
  • 10 oz frozen chopped broccoli thawed and squeezed to remove any liquid

Instructions

  1. Pre-heat the oven to 350 degrees. Lightly mist a 9-inch pie plate with cooking spray and set aside. Add the chopped onion and cook, stirring occasionally, until the onions are softened and golden.
  2. Break the eggs into a mixing bowl and beat them with a whisk. Add the cooked onions, cottage cheese, shredded cheese , salt, pepper, red pepper and broccoli and stir to combine. Transfer the entire mixture to the prepared pie plate and make sure the ingredients are evenly distributed. Bake for 35-45 minutes until the middle is set (not jiggly) and the edges are golden. Cut into slices and serve!
