Ingredients

  • One whole butternut squash
  • half a bag of spinach
  • half a tin of chickpeas
  • two cloves of garlic
  • one red onion
  • 5 mushrooms sliced up
  • 2 tablespoons fat free cottage

Instructions

  1. Halved the butternut squash and cooked it for 50 mins until nice and tender, scooped out the middle and mixed it with chick peas, spinach, onion, mushrooms and chives. Back in the oven for another 20 mins and then topped with a smidge of fat free cottage cheese
