Canadian Cheese Soup
There are plenty of things about Disney that are magical, but one of the best is their food offerings. A visit to Epcot Center lets you try dozens of countries’ food in a single visit and it seems like each thing is more delicious than the last. This Canadian Cheese Soup is one of the standouts! Served at the Le Cellier steakhouse in Epcot, it’s the kind of thing you think about long after you’ve tasted it and has developed somewhat of a cult following. But since a Disney visit isn’t always in the cards, it’s great news that you can make it right in your home kitchen with this official Disney recipe.

Ingredients
- 3 slices center-cut bacon, finely chopped
- 1 medium onion, finely chopped
- 3 celery ribs, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon light butter
- 3 tablespoons all-purpose flour
- 3 cups low-sodium chicken broth
- 3 cups fat-free milk
- 4 oz sharp reduced-fat cheddar cheese, finely shredded
- 1 tablespoon Tabasco sauce
- 1 tablespoon Worcestershire sauce
- 1/2 cup light beer or non-alcoholic beer
- Salt and freshly ground black pepper, to taste
- Chopped green onion or chives, for serving
Instructions
- Cook the chopped bacon in a large pot over medium heat until crisp. Remove excess grease, leaving about 1 teaspoon in the pot.
- Add the onion and celery. Cook for 4–5 minutes until softened.
- Add the garlic and light butter. Cook for about 30 seconds.
- Sprinkle in the flour and stir continuously for 1–2 minutes.
- Slowly whisk in the chicken broth until smooth.
- Add the fat-free milk and bring the soup to a gentle simmer. Cook for 5–7 minutes, stirring frequently, until slightly thickened.
- Reduce the heat to low. Add the shredded reduced-fat cheddar and stir until completely melted.
- Stir in the Tabasco, Worcestershire sauce and beer.
- Season with salt and black pepper.
- Serve hot and garnish with chopped green onion or chives.
Tip
For the closest flavor to the original Canadian Cheese Soup, use a sharp reduced-fat cheddar rather than mild cheese. The stronger cheese flavor means you can use less cheese without losing that classic cheesy taste.
