Weight Watchers Cherry Cheesecake Tortilla Crisps


Ingredients

  • 6 low-carb or high-fiber 8-inch tortillas
  • 8 oz light cream cheese, softened
  • 2 tbsp light butter, melted
  • 2 tbsp powdered sweetener (or powdered erythritol)
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • 1 cup fresh cherries, halved and pitted
  • 2 tbsp graham cracker crumbs
  • 1 tsp cornstarch
  • 2 tbsp water
  • Granulated sugar substitute, to taste (optional)


Instructions

  1. Preheat the oven to 375°F (190°C). Lightly coat a baking sheet with nonstick cooking spray.
  2. In a small bowl, mix the cornstarch with the water until smooth. Set aside.
  3. In a separate bowl, beat the light cream cheese, powdered sweetener, vanilla, and lemon zest until creamy.
  4. Fold the cherries into the cornstarch mixture.
  5. Spread the cream cheese mixture evenly over each tortilla.
  6. Top with the cherry mixture and sprinkle lightly with the graham cracker crumbs.
  7. Bake for 10–12 minutes, or until the tortillas are crisp and the edges are golden.
  8. Let cool for a few minutes before slicing into wedges and serving.
