Cinnamon Raisin Bread Pudding
Up until I shared my Croissant Bread Puddingrecipe, I didn’t think I’d ever had bread pudding. But so many people who have made it, came back to comment on Facebook, “Such delicious bread pudding!” So, apparently that recipe is bread pudding. I had no idea. It did make naming this new recipe easier, though! Cinnamon-Raisin Bread Pudding, it is. And it’s also amazing. If you liked the fruit croissant puff, you’ll love this one, too.
I buy cinnamon swirl bread all the time. Then store it in the garage refrigerator…and forget it’s there. I actually bought a loaf a few weeks ago, originally planned for something else, and then couldn’t remember what for. That turned out to be a good thing, because this bread pudding was born.
It was so good! Sweet and moist, but not mushy, with a little crunch from the baked pieces on top. Super delicious served with maple syrup or cinnamon roll icing.

Ingredients
- 8 slices light cinnamon raisin bread, cut into ¾-inch cubes
- Butter-flavored cooking spray
- 4 large eggs
- 1½ cups unsweetened almond milk
- ½ cup skim milk
- ⅓ cup monk fruit sweetener or Splenda
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ¼ teaspoon nutmeg (optional)
- Pinch of salt
Optional Topping
- Sugar-free maple syrup
- Light whipped topping
- Fresh strawberries or blueberries
Instructions
- Preheat the oven to 350°F (175°C). Lightly coat an 8×8-inch baking dish with cooking spray.
- Spread the bread cubes evenly in the prepared baking dish.
- In a large bowl, whisk together the eggs, almond milk, skim milk, sweetener, vanilla, cinnamon, nutmeg, and salt.
- Pour the mixture over the bread cubes. Gently press the bread down so it absorbs the custard. Let it sit for 10–15 minutes.
- Bake for 35–40 minutes, or until the center is set and the top is lightly golden.
- Allow the bread pudding to cool for about 10 minutes before serving.
- Serve with a drizzle of sugar-free maple syrup or a spoonful of light whipped topping, if desired.
