Cowboy Pie Recipe Slimming World Style 1/2 a Syn on

Serves: 4

Ingredients

  • 2 large onions, diced
  • 2 sticks of celery, sliced
  • 800g extra lean mince beef
  • 2 tsp smoked paprika
  • 1 tsp dried chilli flakes
  • 4 garlic cloves, chopped
  • 680g pouch of passata with basil
  • 600ml of beef stock
  • large can of baked beans
  • 400f can of red kidney beans
  • 325g can of sweetcorn
  • 4 tsp cornflour mixed with 2 tbsp of water
  • 1.85kg of potatoes
  • 300g fat-free natural fromage frais
  • 1 egg, beaten
  • Frylight
  • 1 tsp dried parlsey

Instructions

  1. Stir fry the onions, celery & mince for 5-6 minutes
  2. Add the paprika, chilli flakes & garlic and stir fry for 2-3 ,more minutes
  3. Then add the passata and stock and bring to the boil
  4. Simmer for 10 minutes
  5. Add the baked beans, sweetcorn and conflour mix and season
  6. Simmer for another 10 minutes
  7. While you are doing this chop potatoes and bring to the boil cook 15-20 mins
  8. Then mash with the fromage frais and egg
  9. Add the mince mixture into an oven proof dish
  10. Then layer with potatoes and spray with fry light
  11. Then bake for 25 minutes
  12. Serve with loads of super free veg
