Creamy Pour-Over Baked Potatoes

Thinly sliced potatoes are layered in a baking dish and covered with a rich, creamy mixture, then baked until tender and golden brown. Ingredients
• 2 lb (900 g) potatoes, peeled and thinly sliced
• 1 can (10.5 oz / 298 g) 98% fat-free cream of mushroom soup
• 1 cup unsweetened almond milk (or skim milk)
• ¾ cup reduced-fat sharp cheddar cheese, shredded (or ½ cup fat-free + ¼ cup regular)
• 1–2 tsp olive oil or butter-flavored cooking spray
• ½ tsp garlic powder
• ½ tsp onion powder
• ¼ tsp black pepper
• Optional: ½ tsp dried thyme or parsley, pinch of paprika
• Salt to taste (go easy if watching sodium)
Instructions
1. Preheat oven to 375°F (190°C). Lightly spray a 9×13-inch baking dish with cooking spray.
2. Arrange the thinly sliced potatoes in the dish in even layers.
3. In a bowl, whisk together the fat-free cream of mushroom soup, almond milk (or skim milk), garlic powder, onion powder, pepper, and any optional herbs until smooth.
4. Pour the creamy mixture evenly over the potatoes. Gently press the potatoes down so they are mostly covered.
5. Cover the dish tightly with foil and bake for 45 minutes.
6. Remove the foil, sprinkle the reduced-fat cheddar evenly on top, and bake uncovered for another 15–20 minutes, until the potatoes are tender and the top is lightly golden.
7. Let rest 5 minutes before serving.
