Weight Watchers–Friendly Lemon Blueberry Loaf

For the Loaf

  • 1½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp kosher salt
  • ¾ cup nonfat Greek yogurt
  • ½ cup granulated sugar
  • 3 large eggs
  • 2 tsp freshly grated lemon zest
  • ½ tsp pure vanilla extract
  • ¼ cup vegetable oil
  • 1½ cups fresh or frozen blueberries, thawed and rinsed
  • 1 tbsp all-purpose flour, for coating the blueberries

For the Lemon Syrup

  • ¼ cup freshly squeezed lemon juice
  • 2 tbsp granulated sugar

For the Lemon Glaze

  • ½ cup powdered sugar
  • 1–2 tbsp fresh lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly spray a loaf pan with cooking spray.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, whisk together the Greek yogurt, sugar, eggs, lemon zest, vanilla, and vegetable oil.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Toss the blueberries with 1 tbsp flour, then gently fold them into the batter.
  6. Pour the batter into the prepared loaf pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  7. While the loaf is baking, combine the lemon juice and sugar for the syrup. Warm gently until the sugar dissolves.
  8. Let the loaf cool for about 10 minutes, then brush the lemon syrup over the top.
  9. Mix the powdered sugar with lemon juice to make the glaze. Drizzle lightly over the cooled loaf.
  10. Slice into 10–12 servings.
