Servings: 4 stuffed mushrooms per serving
Ingredients
20 mushrooms (about 1 pound)
1 tablespoon butter
4oz crumbled reduced fat feta cheese
3 oz reduced fat cream cheese, softened
Directions
Preheat broiler. Remove stems from mushrooms and chop. Set whole mushrooms aside. Cook stems, stirring in butter on medium heat for a few minutes (until tender).
Add in feta cheese and cream cheese. Mix well, cook until cream cheese is melted. Spoon evenly into mushroom caps on broiler pan.
Broil 3 minutes or until golden brown; serve warm.
