WW-Friendly Potato Pancakes
Ingredients:
- 6 medium Gold potatoes, shredded
- 2 large eggs
- 2 tbsp all-purpose flour
- ¼ tsp black pepper
- ½ tsp salt
- ½ cup finely chopped onion
- ¼ tsp baking powder
- 1 tbsp vegetable oil for frying
Instructions:
- Shred the potatoes and squeeze them very well to remove excess water.
- Place the shredded potatoes in a large bowl and add the chopped onion.
- Add the eggs, flour, salt, pepper, and baking powder.
- Mix everything until well combined.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat.
- Scoop small portions of the mixture into the pan and flatten them slightly.
- Cook for about 3–4 minutes on each side, until golden brown and crispy.
- Place the cooked potato pancakes on a paper towel to absorb any excess oil.
