Italian vegetable soup

I made some delicious soup today- only 1 weight watchers point per serving!

Ingredients

  • Cooked summer squash
  • 1 cup s
  • Shredded carrots
  • 1 cup s
  • Garlic
  • 3 clove s
  • Cooked onion
  • 1/2 cup s
  • Canned diced tomatoes with onion
  • and garlic
  • 2 can s
  • Chopped frozen spinach
  • 1 package s
  • Red bell pepper
  • 1/2 cup s
  • Cooked whole wheat rotini pasta
  • 2 1/2 cup s
  • vegetable broth
  • 8 cup s
  • Cooked zucchini
  • 1 cup s

Instructions

  1. in the broth for about 10 minutes. Then I added the pasta and the tomatoes. Cook for 10 more minute. Adjust the broth depending on how you prefer your soup. This made a HUGE pot!Makes 10 -12 Servings
