Lemon-Glazed Blueberry Snack Cake

Instructions

  1. Preheat oven to 350 degrees
  2. Spray an 8×8 baking dish with cooking spray. Mix together the following ingredients in large bowl. Make well in center of flour mixture once combined.
  3. 1-1/3 cups all purpose flour
  4. 1/3 cup truvia
  5. 2 tsp baking powder
  6. 1/2 tsp salt
  7. Add the following ingredients into the flour mixture “well” and mix by hand until well combined.
  8. 2 egg whites
  9. 3 Tbl unsweetened applesauce
  10. 3/4 cup unsweetened almond milk
  11. 1- 1/2 tsp vanilla
  12. 1 tsp lemon zest
  13. Pour batter into prepared dish.
  14. 1-1/3 cups of fresh blueberries
  15. Sprinkle blueberries on top of batter.
  16. Bake for 35-40 minutes until a wooden pick inserted comes out clean. A few moist crumbs clinging to the pick is okay, you don’t want wet batter. Cool cake completely.
  17. 1/2 cup Sukrin icing
  18. Fresh lemon juice
  19. Mix together icing and enough lemon juice to make a glaze to your desired consistency.
  20. Drizzle on cooked cake. Cut cake into 9 equal squares.
