  • 1 lb (450 g) 93% lean ground beef
  • 1 teaspoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 3 medium russet potatoes, peeled and diced
  • 3 cups (720 ml) low-sodium chicken or beef broth
  • 1 cup (240 ml) skim or 1% milk
  • ½ cup (120 ml) light cream
  • 1 cup (100 g) reduced-fat sharp cheddar cheese, shredded
  • 1 tablespoon all-purpose flour
  • ½ teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried parsley
  • ¼ teaspoon mustard powder
  • 2 slices cooked turkey bacon, crumbled
  • 2 tablespoons chopped green onions, for topping

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat.
  2. Add the diced onion and cook for 3–4 minutes until softened. Add the garlic and cook for another 30 seconds.
  3. Sprinkle the flour over the beef mixture and stir well.
  4. Add the diced potatoes and broth. Stir and bring to a gentle boil.
  5. Reduce the heat, cover, and simmer for about 15–20 minutes, or until the potatoes are tender.
  6. Stir in the milk, light cream, salt, pepper, smoked paprika, parsley, and mustard powder. Simmer gently for another 5 minutes. Do not boil.
  7. Reduce the heat to low and gradually stir in the shredded cheddar until melted and creamy.
