Mexican-inspired flavors are some of my all-time favorites. This recipe for WW Mexican Spring Rolls has some amazing flavor combinations and is handy finger food.

In this recipe, I used shredded rotisserie chicken, but you can use any shredded chicken breast you prefer. Keep in mind that you must use chicken without the skin to keep the points low.

Personally, I prefer rotisserie chicken because it has more flavor!

HOW TO MAKE THESE WEIGHT WATCHERS MEXICAN SPRING ROLLS?

  • First, preheat the oven to 350 degrees F. Second, line a BAKING SHEET with FOIL or PARCHMENT PAPER.
  • Then dice the jalapeno up into very small pieces after seeding.
  • Combine the shredded chicken, corn, black beans, spices and jalapeno in a large bowl.
  • Take the EGG ROLL WRAPPERS and put them in front of you diagonally.
  • Then I put 2-3 tablespoons of the chicken mixture in the lower end of the wrapper.
  • Roll the wrapper up halfway and fold on the left and right sides and finish rolling to the very end and use a small amount of water to seal the roll.
  • Then I place the Mexican spring rolls onto the baking sheet and I spray with a little bit of nonstick cooking spray.
  • Then I cook for about 30 minutes until brown and crisp.
  • Remove and serve hot.

POINTS PER SERVING
These delicious Weight Watchers Mexican Egg Rolls are only 1 point per roll on the blue and purple plans and 2 points per roll on the green plan. THAT IS AWESOME!

INGREDIENTS

  • 16 Egg Roll Wrappers
  • 1 cup shredded Rotisserie Chicken packed
  • And you’ll need 1/2 cup Sweet Corn Kernels drained and rinsed
  • 1/2 cup BLACK BEANS drained and rinsed
  • 1 Jalapeno seeded and diced small
  • 1/4 cup Cilantro chopped
  • 1/2 teaspoon ONION POWDER
  • 1/2 teaspoon GARLIC POWDER
  • 1 teaspoon TACO SEASONING

INSTRUCTIONS

  1. Combine the shredded chicken, corn, black beans, spices and jalapeno in a large bowl.
  2. Then take an egg roll wrapper and diagonally in front.
  3. And place about 2 to 3 tablespoon of the filling in the lower end of the wrapper.
  4. Then roll up the wrapper halfway and fold in the right and the left sides, then roll to the very end.
  5. Repeat with the remaining wrappers.
  6. Now preheat the oven to 350 and line a baking tray with foil or parchment.
  7. place the prepared spring rolls on the baking sheet and spray them very lightly with cooking spray.
  8. Bake 30 minutes.
  9. Serve hot.

RECIPE NOTES

This recipe is only 1 point per spring roll based on using egg roll wrappers that are 1 point per wrapper for the Blue and Purple plans and 2 points per spring roll on the green plan.
