Picadilly’s Carrot Souffle

Ingredients
- 3 pounds carrots, peeled and chopped
- ½ cup granulated zero-calorie sweetener (such as monk fruit/allulose blend)
- 2 large eggs
- 2 egg whites
- 2 tablespoons light butter, melted
- ¼ cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- Optional: 1 tablespoon powdered zero-calorie sweetener for dusting
Instructions
- Preheat oven to 350°F (175°C).
- Boil the carrots until very soft, about 15–20 minutes. Drain well.
- Add the carrots to a food processor or blender and puree until smooth.
- Add the sweetener, eggs, egg whites, light butter, flour, baking powder, salt, vanilla and cinnamon. Blend until completely smooth.
- Pour into a lightly sprayed 9×13-inch baking dish.
- Bake for 45–50 minutes, until puffed and lightly golden around the edges.
- Let it cool for 5–10 minutes before serving. Dust lightly with powdered sweetener if desired.
