SKINNY BISQUICK IMPOSSIBLY EASY CHICKEN AND BROCCOLI PIE

WW Recipe of the Day: Skinny Bisquick Chicken and Broccoli Impossible Pie

This chicken and cheddar broccoli pie really is impossibly easy to make. I even made my own healthy baking mix to use as a Bisquick replacement.

With minimal chopping required, you can have this ready to pop in the oven in about 15 minutes. After baking for about 35 minutes, you can have dinner on the table in under an hour. It can also be assembled ahead and refrigerated until you’re ready to bake it. 

This broccoli pie would also make for a nice brunch or lunch.

  • Either frozen broccoli florets or chopped broccoli will work in this recipe, as will lightly steamed fresh broccoli. 
  • Frozen mixed veggies can be used instead of broccoli for more variety and color.
  • Substitute ½ cup chopped scallion/green onion for a milder flavor.
  • Additional seasoning ideas: garlic powder, Italian seasoning, dried thyme flakes, crushed red pepper flakes,

Ingredients

  • ▢1 package (10 ounces) frozen chopped broccoli, thawed and drained
  • ▢1 cup shredded reduced-fat cheddar cheese (about 6 ounces)
  • ▢1 cup chopped cooked chicken breast
  • ▢1 medium onion, chopped (about ½ cup)
  • ▢½ cup Bisquick baking mix (I used my own healthy baking mix)
  • ▢1 cup low fat milk (I used unsweetened almond milk beverage)
  • ▢½ teaspoon salt
  • ▢¼ teaspoon pepper
  • ▢2 eggs, lightly beaten

Instructions

  • Preheat oven to 400F. Light grease a 9-inch round pie dish.
  • Sprinkle broccoli, ½ cup cheese, the chicken and onion in the prepared pie dish.
  • In a small mixing bowl, stir together the baking mix, milk, salt, pepper and eggs until blended. Pour evenly into pie plate.
  • Bake for 30 to 35 minutes, or until a knife inserted near the center comes out clean.
  • Sprinkle remaining ½ cup cheese over the top and return to oven for 1 to 2 minutes more, or until the cheese is melted.
  • Remove from the oven and let stand for 5 minutes before cutting into 6 equal slices.
