This Summer Confetti Salad with corn is a high fiber, high protein salad and makes a great side dish or summer appetizer served with chips! Also, a great lunch served with fresh tortillas. Healthy Dip Recipe
Ingredients
- 1 cup bell pepper chopped, green and red
- 1/2 cup tomato chopped
- 1/2 cup mango chopped
- 1/4 cup green onions chopped
- 1/4 cup cilantro fresh, chopped
- 1/2 cup corn drained
- 14 oz green chilies diced, canned or fresh
- 1/4 tsp cumin
- 2 limes sliced
- 1/2 cup black beans rinsed and drained
Instructions
- Chop and dice the veggies.
- Juice the limes, drain and rinse the corn and black beans.
- Combine all of the ingredients mix.
