Summer Confetti Salad

This Summer Confetti Salad with corn is a high fiber, high protein salad and makes a great side dish or summer appetizer served with chips! Also, a great lunch served with fresh tortillas. Healthy Dip Recipe

Ingredients

  • 1 cup bell pepper chopped, green and red
  • 1/2 cup tomato chopped
  • 1/2 cup mango chopped
  • 1/4 cup green onions chopped
  • 1/4 cup cilantro fresh, chopped
  • 1/2 cup corn drained
  • 14 oz green chilies diced, canned or fresh
  • 1/4 tsp cumin
  • 2 limes sliced
  • 1/2 cup black beans rinsed and drained

Instructions

  • Chop and dice the veggies.
  • Juice the limes, drain and rinse the corn and black beans.
  • Combine all of the ingredients mix.
