sweet potato topped with Buffalo chickpeas is four points for the entire recipe or two points if you split in half It is soooo delicious & satisfying!!

Ingredients

  • 1 sweet potato
  • 1 can chickpeas
  • 2 tablespoons fat free ranch dressing
  • 3 ounces franks hot sauce
  • 1 tablespoon avocado

Instructions

  1. I wash, pierce and wrap my sweet potatoes in foil and bake at 400 until soft (the sugar is so caramelized and amazing… baking time depends on the size of potato… but baking them is the way to go!!) when they are basically finish, I make the Buffalo chickpeas. 1 can of chickpeas… I drain the juice (don’t rinse), pour in a sauce pan w/ 3oz franks hot sauce and on medium heat, boil until sauce is thickened. add 2 tablespoons fat free ranch dressing 1 tablespoon avocado -Comes together FAST
