This Weight Watchers Pot Pie Casserole was created after I saw how wildly popular my Weight Watchers Taco Casserole was! There are many options with this pot pie recipe, so don’t be afraid to mix it up! Each serving is 6 SmartPoints if you’re following the Weight Watchers plan.
Weight Watchers Pot Pie Casserole
Ingredients
2 cups cooked chicken (boneless skinless)
2 cups frozen mixed vegetables
1 can of cream of mushroom soup
1 can of cream of potato soup
1/4 white onion, chopped
1 can low-fat biscuits
*Removed potatoes as they didn’t add nutritional value, just points.

This recipe is great for a party, potluck, or just for any weeknight dinner! Whether your friends and family are doing Weight Watchers or not, they’ll love this dish!
In a skillet, saute frozen mixed veggies and chopped onion until tender. I usually use the bag that has asparagus in it, but I couldn’t find it this time. Pour into a casserole dish, along with your soups. Mix thoroughly.
Break apart biscuit into pieces, cover all over your veggies.
Bake at 350 for 20 minutes.
