Weight Watchers Friendly Taco Bubble Up Casserole

Ingredients:

  • 1 pound lean ground beef ( I now use 93% lean ground turkey)
  • 2 cups low-fat shredded cheese(I use WW brand)
  • 1 can of black beans, rinsed and drained Zero Point food for me
  • 1 can Rotel
  • 1 can enchilada sauce (19 oz)
  • 1 red pepper, chopped
  • 1 red onion, chopped
  • 1/2 bunch green onion, chopped
  • 1 can refrigerator biscuits (use 7.5 ounces can keep the points as listed above)

2 Ingredient Pizza Dough:

  • 1 1/8 cup self-raising flour (1/8 cup for kneading)
  • 3/4 cup of Nonfat Plain Greek yogurt Zero Point food for me
  • 2/3 cup water
  • 2 Tbsp taco seasoning
  • 2 tsp minced garlic

Instructions:

  1. Cook hamburger till browned. While the hamburger is browning, chop up biscuits.
  2. Once the hamburger is browned, add taco seasoning and water and cook until most of the water has evaporated.
  3. Add veggies and garlic and cook for a couple of minutes till slightly softened.
  4. Add enchilada sauce, Rotel and beans, mix well.
  5. Then add half of the cheese and mix well.
  6. Mix in chopped biscuits.
  7. Pour mixture into a prepared 13X9 inch pan and cook at 350 for 25 minutes.
  8. Add remaining cheese and return to oven for about 5 minutes or until cheese is melted.

Servings: Makes 6 servings
