Ingredients

  • 1 ( 32 oz.) bag southern style hash browns or peeled and diced potatoes, thawed
  • 14 oz. turkey kielbasa, cut into small pieces or halved.
  • 1 small onion, diced
  • 3/4 cup 50% reduced fat shredded cheese
  • 1 ( 10.5 oz.) can healthy request cream of chicken soup or homemade cream of chicken soup* see notes
  • 1 cup unsweetened almond or cashew milk
  • Fresh parsley, chopped-optional garnish

Instructions

  1. Spray a slow cooker with non stick cooking spray. 
  2. Combine hash browns, kielbasa, onion, and cheese in the slow cooker pot. 
  3. In a small mixing bowl combine the cream of chicken soup with unsweetened almond milk. Whisk until well combined. * note: if you are using the homemade cream of chicken soup-you will not need to add the additional cup of unsweetened almond milk.
  4. Pour cream of chicken mixture over hash browns, turkey kielbasa, onion, and cheese. Stir until well combined.
  5. Cook on high for 3 hours.
  6. Remove lid, stir, and enjoy!
  7. Store leftovers in an airtight container in the fridge for up to a week or freeze for up to three months.
