Weight Watchers Apple Fritters

Ingredients

  • 2 cups self-rising flour
  • 1/4 cup granulated sweetener (or 1/3 cup sugar)
  • 1 tsp apple pie spice
  • Pinch of salt
  • 3/4 cup unsweetened almond milk
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups peeled, finely chopped apples
  • Cooking spray (instead of oil)
  • Optional: Cinnamon sugar substitute for topping

Instructions

  1. Preheat the oven to 400°F (200°C) or an air fryer to 375°F (190°C).
  2. In a large bowl, whisk together the flour, sweetener, apple pie spice, and salt.
  3. Add the almond milk, eggs, and vanilla, mixing until just combined.
  4. Fold in the chopped apples.
  5. Scoop about 1/4 cup of batter onto a parchment-lined baking sheet or into the air fryer basket lined with parchment.
  6. Lightly spray the tops with cooking spray.
  7. Bake for 15–18 minutes, or air fry for 10–12 minutes, until golden and cooked through.
  8. If desired, sprinkle with a little cinnamon sweetener while warm.
