Ingredients

  • 1½ cups reduced-fat graham cracker crumbs

  • 1 (0.3 oz) package sugar-free lemon gelatin
  • ¾ cup boiling water

  • 1 tsp grated lemon zest (optional)

Instructions

  1. Mix the graham cracker crumbs, melted light butter, and applesauce. Press into a 9-inch pie dish and chill for 20 minutes.
  2. Dissolve the sugar-free lemon gelatin in the boiling water. Stir in the sweetener, lemon juice, zest, and salt. Let cool until slightly thickened.
  3. Beat the chilled fat-free evaporated milk until fluffy, then gently fold it into the gelatin mixture along with the light whipped topping.
  4. Pour into the chilled crust and refrigerate for at least 4 hours, or until set.
  5. Top with additional light whipped topping and lemon zest before serving if desired.
