BLT Chicken Salad

It’s hard to go wrong with a chicken salad. They’re easy to throw together, high in protein, and pretty dang delicious. And while we do love a classic chicken salad, sometimes ya gotta mix things up. That’s where this BLT Chicken Salad comes in! This flavorful dish keeps all the best parts of the original sandwich and adds a few tasty twists to make an irresistible lunch salad. Perfect for a summer picnic or easy meal prep, it’s hearty enough to stand alone and versatile enough to pile into a sandwich, wrap, or salad. This recipe does it all!

No surprise, the recipe starts out with a base of shredded chicken. Grill up some chicken breasts, get a rotisserie chicken from the store, or repurpose some leftovers. Next up, we toss in crunchy bacon crumbles, sweet cherry tomatoes, and a handful of green onions for a bright pop of flavor. A little finely chopped shallot adds just enough bite without overpowering the dish. The homemade dressing strikes just the right balance with a tangy blend of mayonnaise and Greek yogurt. The yogurt lightens things up, while still keeping the creaminess we love in a classic chicken salad. A dash of garlic and onion powder, plus a sprinkle of black pepper, pulls everything together.

Once everything’s tossed together, give it a little time to chill in the fridge. That half hour not only helps the flavors meld, but also makes it the perfect make-ahead meal. Scoop it onto lettuce cups for a low-carb lunch, spread it on toast for a yummy sandwich, or simply grab a fork and dig in straight from the bowl. However you serve it, this BLT Chicken Salad is bound to become a favorite in your kitchen.
