Dandy-Do Cookies

For example, these easy Dandy-Do Cookies. Peanuts are mixed into a super simple caramel sauce and scooped on top of a Ritz cracker. Yup, they’re as tasty as they sound. The caramel sauce is made with a can of sweetened condensed milk, making the process super simple. Combine it with butter and sugar on the stove top until the mixture is smooth and slightly thickened. Next, whisk in a little milk, vanilla, and a handful of chopped peanuts (or the nut of your choice!). Once that mixture is fully combined, spoon it onto the crackers and then let them cool.

Ingredients
- 24 reduced-fat Ritz crackers
- ½ cup powdered peanut butter (PB2)
- ¼ cup unsweetened almond milk
- 1 tsp vanilla extract
- 1 cup sugar-free white chocolate chips
- 1 tsp coconut oil (optional, for smoother melting)
- 2 tbsp chopped peanuts (optional, for crunch)
Instructions
- Line a baking tray or plate with parchment paper.
- Mix the PB2, almond milk, and vanilla until thick and creamy.
- Spread about 1 teaspoon of the peanut butter mixture onto each Ritz cracker.
- Melt the sugar-free white chocolate chips (with the coconut oil if using) in 20-second intervals in the microwave, stirring each time.
- Spoon the melted white chocolate over each cracker, letting it drip naturally over the edges like the photo.
- Sprinkle with a few chopped peanuts if desired.
- Refrigerate for 20–30 minutes until set.
