Ingredients

  • 1 lb (450 g) 96% lean ground beef or extra lean ground turkey
  • 1 cup diced onion
  • 1 cup diced bell peppers
  • 1 packet reduced-sodium taco seasoning
  • 1/2 cup water
  • 1 cup nonfat Greek yogurt
  • 1/4 cup light mayonnaise
  • 1 cup reduced-fat shredded cheddar cheese
  • 1 cup reduced-fat shredded Mexican blend cheese
  • 1 cup diced tomatoes (drained)
  • 1/2 cup corn (optional)
  • 1 can (7.5 oz) refrigerated reduced-fat biscuits, cut into pieces
  • Green onions for topping

Instructions

  1. Preheat oven to 375°F (190°C). Spray a baking dish with nonstick cooking spray.
  2. Cook ground beef with onion and bell peppers until browned. Drain any excess fat.
  3. Add taco seasoning and water. Simmer for 2–3 minutes.
  4. In a bowl, mix Greek yogurt and light mayonnaise until smooth.
  5. Place biscuit pieces in the bottom of the baking dish.
  6. Add the beef mixture, then spread the yogurt mixture over the top.
  7. Sprinkle with reduced-fat cheese and add tomatoes.
  8. Bake for 25–30 minutes until golden and bubbly.
  9. Top with green onions before serving.
