Weight Watchers Creamy Garlic Chicken with Mushrooms

Ingredients

For the Chicken

  • 1½ lbs boneless, skinless chicken breast, cut into fillets
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp dried thyme
  • ½ tsp dried rosemary
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tsp olive oil spray (or cooking spray)

For the Sauce

  • 1 tsp light butter
  • 8 oz sliced brown mushrooms
  • 4 cloves garlic, minced
  • 1 tbsp fresh chopped parsley
  • ½ tsp dried thyme
  • ½ tsp dried rosemary
  • 1 cup fat-free evaporated milk
  • ½ cup plain nonfat Greek yogurt
  • ¼ cup grated light Parmesan cheese
  • 1 tsp cornstarch (optional, to thicken)

Instructions

  1. Season the chicken with the onion powder, garlic powder, thyme, rosemary, salt, and pepper.
  2. Heat a large nonstick skillet over medium-high heat and lightly coat with cooking spray. Cook the chicken for 5–6 minutes per side, or until fully cooked. Remove and set aside.
  3. In the same skillet, melt the light butter. Add the mushrooms and cook for 4–5 minutes until tender. Stir in the garlic and cook for 30 seconds.
  4. Add the thyme, rosemary, and fat-free evaporated milk. Simmer for 2–3 minutes.
  5. Whisk the Greek yogurt with a little of the warm sauce, then stir it into the skillet. Add the light Parmesan cheese and stir until melted. If you’d like a thicker sauce, mix the cornstarch with 1 tablespoon of cold water and stir it in.
  6. Return the chicken to the skillet and simmer for 2–3 minutes until heated through.
  7. Garnish with fresh parsley and serve.
