Ingredients (Makes 16 cream puffs)

For the Choux Pastry

  • 1 cup (240 ml) water
  • 2 tbsp light butter
  • 1 cup (120 g) all-purpose flour
  • ¼ tsp salt
  • 3 large eggs + 1 large egg white

For the Vanilla Cream Filling

  • 2 cups (480 ml) fat-free milk
  • 3 tbsp granulated sweetener (or ¼ cup sugar)
  • 3 tbsp cornstarch
  • 2 large egg yolks
  • 1 tsp light butter
  • 1½ tsp vanilla extract

Optional Topping

  • Light dusting of powdered sugar (optional)
  • Sugar-free chocolate syrup for drizzling (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan, bring the water, light butter, and salt to a boil.
  3. Stir in the flour all at once and cook for 1–2 minutes, stirring constantly, until a smooth dough forms.
  4. Let the dough cool for 5 minutes, then beat in the eggs one at a time, followed by the egg white, until smooth and glossy.
  5. Pipe or spoon 16 small mounds onto the baking sheet.
  6. Bake for 25–30 minutes until puffed and golden. Cool completely.
  7. For the filling, whisk together the milk, sweetener, cornstarch, and egg yolks in a saucepan. Cook over medium heat, stirring constantly, until thickened.
  8. Remove from the heat and stir in the light butter and vanilla. Chill completely.
  9. Slice each cream puff in half and fill with the chilled vanilla cream.
  10. Dust lightly with powdered sugar or drizzle with sugar-free chocolate syrup, if desired.
