Ingredients

  • 1 ¼ lb. boneless, skinless chicken tenders
  • 1 tsp. dried basil
  • ½ cup all-purpose flour
  • ¼ tsp. paprika
  • 2 tbsp. olive oil (reduced from 6 tbsp. to lower WW Points)
  • 1 cup Panko breadcrumbs
  • 3 tsp. minced garlic
  • ⅔ cup grated Parmesan cheese
  • Salt and black pepper to taste

WW tip: Using 2 tbsp. olive oil instead of 6 tbsp. significantly reduces the Points while keeping the chicken crispy and flavorful.

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken tenders with salt, pepper, dried basil, and paprika.
  3. Place the flour in one bowl.
  4. In another bowl, combine the Panko breadcrumbs, Parmesan cheese, and minced garlic.
  5. Coat each chicken tender lightly in flour, then coat with the Panko-Parmesan mixture.
  6. Place the chicken on a baking sheet lined with parchment paper. Lightly drizzle with the 2 tbsp olive oil.
  7. Bake for 20–25 minutes, flipping halfway through, until golden brown and the chicken is fully cooked.
  8. Serve hot and enjoy!
