Ingredients:
- ⅓ cup light brown sugar
- 1 tsp cinnamon + 1½ tsp ground cinnamon
- ½ cup granulated sugar
- 2 tbsp granulated sugar
- ¼ cup unsalted light butter
- 2 large eggs
- 1½ tsp pure vanilla extract
- 1½ cups all-purpose flour
- 1¾ tsp baking powder
- ½ cup unsweetened almond milk or skim milk
- 2 large Granny Smith apples, peeled and chopped

- Preheat the oven to 350°F (175°C). Lightly spray a 9-inch (23 cm) cake pan with cooking spray.
- In a small bowl, mix ⅓ cup brown sugar with 1 tsp cinnamon. Set aside.
- In a large bowl, beat the light butter and ½ cup sugar until smooth.
- Add the eggs and vanilla extract and mix well.
- In another bowl, whisk together the flour and baking powder.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix just until combined.
- Fold in the chopped Granny Smith apples.
- Pour the batter into the prepared pan and spread evenly.
- Sprinkle the brown sugar-cinnamon mixture over the top. Mix the remaining 2 tbsp sugar with 1½ tsp cinnamon and sprinkle that over the apples as well.
- Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool for 10–15 minutes before slicing.
