Pumpkin Layers
- 1 cup 100% pumpkin puree
- 2 large eggs
- ½ cup vanilla protein powder
- ¾ cup oat flour
- ½ cup nonfat Greek yogurt
- 3 tbsp zero-calorie sweetener
- 1 tsp vanilla extract
- 1½ tsp pumpkin pie spice
- ½ tsp cinnamon
- 1 tsp baking powder
- ¼ tsp salt
White Cream Layer
- 1 cup nonfat Greek yogurt
- 4 oz fat-free cream cheese, softened
- 2 tbsp powdered zero-calorie sweetener
- 1 tsp vanilla extract
- 1 tbsp vanilla protein powder
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
- Mix all the pumpkin-layer ingredients until smooth.
- Spread half of the pumpkin batter evenly into the pan.
- Bake for 10–12 minutes, just until the surface begins to set.
- While it bakes, mix all the white cream layer ingredients until completely smooth.
- Carefully spread the white cream mixture over the partially baked pumpkin layer.
- Spoon the remaining pumpkin batter over the cream layer and gently spread it into an even layer.
- Bake for another 20–25 minutes, until the center is set.
- Let it cool completely, then refrigerate for at least 2 hours.
- Cut into 16 bars.
Don’t overbake it. The pumpkin layers should stay moist and dense, not cake-like. Refrigerating it makes the white middle layer firm up and gives you that clean pumpkin → white cream → pumpkin appearance when sliced.
Optional: Drizzle a very thin layer of melted sugar-free white chocolate on top if you want the finished bars to look even closer to the photo—but that will add Points.
