Slow Cooker 3-Ingredient Limoncello Spritz Cake
Serve this cake warm, scooped straight from the slow cooker into small bowls or onto plates, letting the glossy limoncello glaze drip down the sides. It pairs beautifully with a dollop of lightly sweetened whipped cream or a scoop of vanilla or lemon sorbet to echo the spritz theme.
For adults, offer chilled limoncello spritzes or a simple glass of prosecco on the side; for a non-alcoholic pairing, try sparkling lemonade over ice with a twist of lemon. At a pool party, I like to set the slow cooker on the “warm” setting with a ladle and stack of small bowls so guests can help themselves between swims.

Ingredients
- 1 box sugar-free lemon cake mix
- 1 (12 oz) can diet lemon-lime soda (Sprite Zero or 7UP Zero)
- ½ cup fresh lemon juice
Instructions
- Lightly coat the inside of your slow cooker with nonstick cooking spray.
- In a large bowl, combine the cake mix, diet lemon-lime soda, and fresh lemon juice. Stir just until combined.
- Pour the batter into the prepared slow cooker and spread it evenly.
- Cook on LOW for 2½–3 hours or on HIGH for 1½–2 hours, until a toothpick inserted in the center comes out clean.
- Turn off the slow cooker and let the cake cool for about 15 minutes before slicing.
- Slice into 12 servings and enjoy!
