Weight Watchers-Friendly Cabbage Rolls


Ingredients

Sauce

  • 1 (28 oz) can fire-roasted diced tomatoes, undrained
  • 1 (15 oz) can no-sugar-added tomato sauce
  • 1 tbsp olive oil
  • ½ cup onion, finely chopped
  • 1 tbsp brown sugar substitute (or your preferred zero-calorie sweetener)
  • 1 tsp minced garlic
  • 1 tbsp red wine vinegar
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper, to taste


Cabbage Rolls

  • 1 large head green cabbage
  • 2 lbs. 96% lean ground beef (instead of regular ground beef)
  • 1 cup cooked brown rice (or cauliflower rice for even fewer Points)
  • ½ cup onion, finely chopped
  • 2 large eggs
  • ¼ cup fresh parsley, chopped
  • 1 tsp Italian seasoning
  • 1 tsp ground cumin
  • Salt and black pepper, to taste


Instructions

  1. Bring a large pot of water to a boil. Remove the cabbage leaves carefully and boil them for 2–3 minutes until softened. Drain and let cool.
  2. In a saucepan, heat the olive oil and cook the onion until soft. Add the garlic, diced tomatoes, tomato sauce, sweetener, vinegar, red pepper flakes, salt, and pepper. Simmer for 15–20 minutes.
  3. In a large bowl, combine the lean ground beef, cooked rice, onion, eggs, parsley, Italian seasoning, cumin, salt, and pepper.
  4. Place about ¼ cup of the meat mixture onto each cabbage leaf. Fold in the sides and roll tightly.
  5. Spread a little sauce in the bottom of a baking dish. Arrange the cabbage rolls seam-side down and pour the remaining sauce over the top.
  6. Cover with foil and bake at 350°F (175°C) for 60–75 minutes, or until the cabbage is tender and the beef is fully cooked.

Estimated Weight Watchers Points

  • With 96% lean ground beef and brown rice: 4–5 Points per cabbage roll (based on making about 12 rolls).
  • With cauliflower rice: 3–4 Points per cabbage roll.

This version keeps the classic flavor while significantly reducing the Weight Watchers Points.
